The Many Flavors of Fondant

Fondant.  As I get more into cakes, I look around at stores and recipes for the different types that are available. For a lot of my cakes, it’s easy enough to go to the store and buy it.  There are so many different brands available: Wilton, Cake Boss, and Duff all have different fondant types.  Believe it or not, they all taste a bit different.  Newer brands are emerging in the stores too.  I am always interested in how each brand tastes, and for my personal tastes, some definitely taste better than others.  One brand, recently revamped their recipe and made it taste a lot better.  Other flavors taste better when it’s a white color, instead of a darker color. Each company has their own recipe.

Fondant is so easy and cost friendly to make, unlike the product in the store, which can easily cost $10.00 a pound. Buying it in a store or online is useful sometimes, like when you want a bold or dark color. Black for instance. It’s harder to make those colors because it takes more dye to color the fondant when you make it yourself.

Sometimes, it’s just better to make it on your own.

Marshmallow fondant is very simple to put together. It’s only a few ingredients: marshmallows, confectioner’s sugar, shortening or butter, water, and any flavoring you might want to add. Most of these ingredients, I usually have on hand. If I don’t, I can walk to the supermarket and buy it. The ingredients individually are not very expensive. You might pay $7 for shortening, marshmallows, and powdered sugar.

I remember the first time I made marshmallow fondant, I didn’t really like the taste of it. My family said that it tasted a lot better than the store Fondant: Homemade Marshmallowbought fondant. So I wanted to try it again, and this cake was a great time to do so. It was simple to make, Melt the marshmallows, add the powered sugar and kneed. I decided this time around to add some vanilla flavoring to the fondant. Once it was made, I tasted a small piece and I think the Vanilla made a big difference. There are many variations to fondant, and any type of flavoring can be added to it. It was a great experiment.

Experiment: Naturally Flavored Icing

My husband came home one day and said that they had this good cake at work, and it had naturally flavored frosting.  He really enjoyed the flavor and wanted to try making our own.

Icing_Blueberries.jpgAfter some discussion and research on which foods are used for dying different colors, we decided to use blueberries.  Blueberries are a darker color and we were curious as to what color it would create and how it would taste.  My husband spent over an hour hand squeezing and straining a pint of blueberries.  It was a messy job… but someone had to do it.

Icing_PinkFromBlueberries.jpgAfter the blueberries were strained four times, to ensure that the blueberry sauce was nice and smooth, I slowly started adding it to my dairy-free buttercream to see how the color and flavor changed. I added the blueberry sauce 1/2 tsp at a time to see how the color and flavor changed.  After 4 tsp, I stopped adding blueberry sauce because we were starting to taste a small berry flavor in the icing.  The icing image is the color of the icing before we stopped.  It is a nice pastel pink color.

We refrigerated the icing, and tasted it daily over the last few days.  My husband really likes it.  The berry flavor has come out a little more, but not too much that I would call it a blueberry icing.  Overall, the experiment was a success.

This has led to some discussions and additional research at The Treehouse about integrating a natural flavoring option into our products.  While the blueberry idea was fun, I don’t know if it’s realistic to spend that much time squeezing fruit every time someone orders a naturally flavored cake. There are several additional options, and more research to be done.  Look for natural flavors to come to The Treehouse at some point.

First Official Order!

The Treehouse has received it’s first official order.  It was simple cake, which was fortunate, because there was only a 2 day turn around time.  The order was for a chocolate cake, with chocolate frosting and “Happy Birthday Dan” written on it.  I used my Grandmom’s Chocolate Cake recipe and a dairy-free chocolate buttercream, since I knew the cake was going to sit in my office for the day before it could go home with the birthday boy.  The guy who ordered it is a co-worker of mine and I buy veggies from him that he grows in his farm.  So I decided that, while not requested, I would add some decorations, a bit of a personal touch.  The veggies are made out of fondant and he really loved them.

I made a chocolate cake yesterday for a birthday in the beginning of September.  I like to make them early so I can freeze them.  By freezing a cake, all the moisture is locked in. Many people prefer a cake that has been frozen over a cake that has been made and served right away.  I’ve made box cakes, and people always love them and don’t believe it’s a box cake.. once they’ve been frozen.  It’s like magic.  If I don’t have multiple days to freeze a cake, just freezing it overnight can make a difference in the quality.  Freezing a cake is simple. Just cover it in a lot of plastic wrap and put it in an airtight container ( if you can ).  Ensuring that it’s airtight will keep it fresh and prevent the cake from absorbing the different smells in the freezer.  Next time you make a cake… you should try it!

Welcome to The Treehouse Cakery!

The Treehouse Cakery, a new endeavor for me.

My name is Jamme (pronounced Jamie) and I started The Treehouse Cakery because I love decorating cakes. I’ve been doing this for about a year now and I am excited to start this new venture. I picked the name The Treehouse Cakery because I love nature and trees. They are beautiful and peaceful. Plus treehouses remind me of children playing and goofing off. Having fun. I want this with my cakes peace and fun.

All my cakes should satisfy your needs. As I say, the Treehouse is the place to come play with your cake. Cakes are so easily customized… all their parts can be changed. So hopefully, the Treehouse can meet all you cake needs.
